Roasted pineapple with spices and rum

Roasted pineapple with spices and rum

Ingredients

If you are one of those people who consume little fruit, this recipe will make you fall in love with them. A light and digestive dessert.

1 or 2 TERANA star anise
   30 g dark rum
   1 pinch of TERANA cinnamon
   1 ripe natural pineapple
   2 tablespoons muscovado sugar
   1 tablespoon butter
   1 vanilla pod

Preparation

1.Peel the pineapple, remove the crown and the base, then cut it in half and repeat until you have 8 slices. Then remove the heart (the central part that is hard).
2.In a non-stick frying pan, heat the butter along with the TERANA star anise over low heat.
3.When it has melted, add the pineapple and turn all the segments until the butter is well coated.
4.Open the vanilla pod and, with the tip of a knife, recover the seeds and spread them over the pineapple.
5.Sprinkle the cinnamon and continue turning it from time to time.
6.Add the sugar, distributing it over the pineapple.
7.Before it begins to caramelize, add the rum. Let it cook, turning the pineapple occasionally, until it is tender (but not too soft) and the liquor has evaporated. *At the bottom of the pan and surrounding the fruit there should be caramel.
