Stewed chickpeas with spicy tomato sauce
Ingredients
Traditional flavor with a modern touch: Chickpeas in spicy tomato sauce. - 400 g canned cooked chickpeas - 1 kg of tomatoes - TERANA ground coriander to taste - TERANA fine herbs to taste - TERANA hammered tree chili - TERANA ground cumin to taste - Coriander seeds - TERANA Indian style curry to taste - TERANA ground black pepper to taste
Preparation
1. Wash the chickpeas and drain them well.
2. In a large pot, add two or three tablespoons of olive oil and add the kilo of tomatoes cut into pieces. To give it a spicy touch, you can add a little TERANA crushed tree chili.
3. Let them fry over medium heat for 30 minutes, pressing occasionally with a spoon to release the water. While the tomato sauce is reducing, mix the TERANA spices that you are going to use in a molcajete.
4. Add the spices and mix well, and continue reducing the tomato - now over low heat - for another seven or eight minutes, taste and adjust the salt and pepper.
5. Once ready, pass the sauce through the strainer and serve it over the cooked chickpeas, letting the whole thing cook for ten more minutes so that the flavors are well integrated.
