Ingredients

The perfect gift for mom: a healthy meal full of love. Try this quinoa salad with avocado and spiced mango. 4 servings: - 1 ½ cups cooked quinoa - 1 large avocado, cubed - ¼ red onion, thinly sliced - Chopped fresh cilantro to taste - 2 tablespoons of olive oil - 2 tablespoons lemon juice - Salt and TERANA ground black pepper to taste   For the spicy mango: - 1 large chopped mango - TERANA ground chipotle chili to taste - ¼ teaspoon TERANA ground cumin - ¼ teaspoon TERANA ground ginger - ¼ teaspoon TERANA ground cinnamon - 1 teaspoon brown sugar - 1 teaspoon olive oil

Preparation

1. Mix the mango with the spices and olive oil. Let marinate for 30 minutes.
2. In a large bowl, mix the cooked quinoa, avocado, red onion and cilantro.
3. Add the spiced mango and mix well.
4. Season with olive oil, lemon juice, salt and TERANA pepper to taste.
