Cajun style quinoa stuffed avocado

Ingredients

Start the year on the right foot and prepare this delicious healthy recipe using our TERANA Cajun Style Seasoning: Cajun Quinoa Stuffed Avocado + 2 ripe avocados + 1 cup of cooked quinoa + 1 tomato, chopped + 1/2 cup of cooked corn + 1/4 cup red onion, chopped + 1/4 cup fresh cilantro, chopped + 1 tablespoon lemon juice + 1 teaspoon TERANA Cajun Style Seasoning + Salt and pepper to taste

Preparation

1. Preparation of Avocados: Cut the avocados in half and remove the stones. With a teaspoon, scoop out some of the pulp to make room for the filling.
2. Quinoa Filling: In a bowl, mix the cooked quinoa, tomato, corn, red onion and cilantro.
3. Season with TERANA: Add the lemon juice and TERANA Cajun Style Seasoning to the bowl. Stir well so that all the ingredients are well seasoned.
4. Fill the Avocados: Fill each avocado half with the quinoa mixture. Press lightly to compact.
5. Finishing Touch: Sprinkle a little more TERANA Cajun Style Seasoning on top for a final touch of flavor.
