Pineapple tepache
Ingredients
● 3 TERANA cloves
● The peels of half a ripe pineapple
● 1 cup piloncillo cut into pieces or brown sugar
● 1 cinnamon stick
● 2 liters of filtered water
Preparation
1.In a clay or glass jar, place the pineapple, piloncillo or brown sugar, the cinnamon stick, the cloves and 2 liters of water. Cover loosely with plastic so the mixture can breathe and rest for 24 hours.
2.Using a wooden spoon, remove the white foam that forms on the liquid and cover again loosely with plastic wrap. It should rest for 24 more hours. *Do not let it ferment any longer, as it will turn into vinegar. Note: When it is already fermented, a white layer forms on the surface that must be removed.
3.Strain the liquid and place it in another jar with plenty of ice, taste and sweeten to your liking.
